MISSION: Eat Breakfast, Prep in BULK! Win Some Breakfast too!

Breakfast. One of my <many> New Years resolutions. But this one is easy, I just have to eat. Right?!

Life is getting so busy around our house, if I get a cup of coffee in in the morning, I am super happy. Sometimes I'll steal a slice of banana or bite of scrambled egg off my daughter's tray, but give little thought to what I eat and drink before 12 p.m.. This is something that NEEDS to change! Eating breakfast can improve concentration, fuel us for a workout, help to control weight, and even LOWER cholesterol. Don't believe me, google it. And then snopes.com it. (No, not really, that one was for my husband.)

The past few weeks I've implemented: MISSION: Eat Breakfast, Prep in BULK! This has been a LIFESAVER! Both for me, and my husband! If you get on Pinterest, you will see freezer meals galore for dinner. Why not do that for breakfast?!

My husband and I have differing options on oatmeal flavor and texture- which is why this recipe is fantastic for us! I love sweet so I add in honey or maple syrup. He prefers it without sweetener. I like THINNER oatmeal (I would say normal oatmeal) so I use about 3/4 c water. He likes it THICK so he uses about 1/2 c water!  Feel free to change up these ingredients to your own personal preferance!

Bulk Homemade Instant Oatmeal

Mix together:
  • 4 c quick-cooking oats
  • 3 c quick-cooking ground oats (I use a food processor, helps give the oatmeal a creamer texture!)
  • 1 c nondairy powdered creamer
  • 1.5 c cranberries
  • 1/2 c hemp hearts
  • 1/2 c ground Salba Smart® chia seeds
  • 1/2 c ground flax
  • 1 c chopped nuts (almonds, walnuts, etc.)
  • 2 tbsp cinnamon
  • 2 tsp ginger
  • 2 tsp nutmeg

Measure: 1/2 cup into each snack-size freezer bag. 

To serve: mix in 1/2- 3/4 cup HOT water (we use Keurig) 

Makes at least 18- 1/2 cup DRY servings (each serving equivalent to TWO store-bought instant oat pouches)

These are delicious and great to put in the freezer! My husband bagged them up in sets of two and throws a bag in his pocket on the way to work.

CH-CH-Chia & Naner Muffins

  • One bag of Purely Elizabeth® ancient grain oatmeal - Organic Cranberry Pumpkin Seed -OR- 3 cups rolled oats
  • 2 cups steal cut oats
  • 1/4 c ground Salba Smart® chia seeds
  • 1/2 tsp salt
  • 2/3 cup chopped Cacao Chocolate Nibs*  (I use food processor)
  • 1/2 cup coconut  
  • 5-6 overripe bananas, mashed
  • 4 TBSP organic maple syrup
  • 2 1/3 cup water
  • 1/4 cup coconut oil (melted)
  • 2 vanilla beans, sliced, seeds removed. -OR- two tsp vanilla extract

Preheat oven to 375 degrees. Line 24 muffin tins (may need more or less depending on your batch).
Mix in two separate bowls, dry and liquid ingredients, thoroughly.  Mix wet into dry. (Feel free to sample the batter, there are no raw eggs here! ;) Fill each muffin tin and bake 20-25 minutes.

Don't forget to try one hot out of the oven!

*You can use regular chocolate chips. I prefer Cacao due to their naturally lower sugar content
