You Should Go Eat a Buffalo!

What comes to mind when someone asks about buffalo isn't actually a big, hairy beast at all. For me, it's chicken. Or to be more specific, something similar to these.

I'm always on the look out for something new and healthy for dinner for my family. Especially with a toddler addition! Gotta give those new taste buds something to discover all the time! Bison is something we love, but hadn't had in a while! This would be our daughters first time trying it out.

My daughter, Skarlette, is a meat LOVER. We're always able to get her to eat meat. Red meat in particular. She also seems to steer (har-har) towards the gamier meats. Lamb has been her NUMBER ONE favorite since we introduced meat. So how could she not like buffalo?

We love Bison in our house. Not just because of the amazing flavor, but because of the great health benefits to us. All you have to do is glance at this chart, and I'm sure you will understand why we love it so much!

Aren't the buffalo an endangered species? Actually, not anymore! Back in the 1800's they decreased in numbers, however, their numbers are rising steadily. How great is that!? 

As an Allstar, (Check out my profile on HERE!) I was able to choose from a short list of recipes. My eyes, and stomach, immediately settled on:

After the initial excitement, I realized that I've never eaten Couscous, never made Couscous, and now... I was a bit nervous. (I'll get to that!)

Assembling the kabobs was quite easy, with exception of the scallops!  I made the mistake of buying frozen scallops (as the recipe states as an option). I thought I would save myself a couple dollars. MISTAKE! Opt for fresh! Always! If you have fresh seafood in your area, do it. It's worth the extra money!

I put the ingredients for the  brush-on in a mason jar, put the lid on, and shook it up! Perfect for bringing out to the grill as well!

I love grilling projects because my husband gets to be the Grill Master! He is amazing on the grill! I, on the other hand, can't even properly brown a marshmallow outdoors. So Barbequing is always team work! Go Jeremiah!

Meanwhile, back in the kitchen, I was scratching my head staring at my unmarked baggy of Couscous. I found this couscous at Whole Foods in the bulk section. The recipe states, "Quick-Cooking Couscous." I had no idea there were different types. I've never tried it, never made it. (I have wanted to though!) So, I just decided to go for it- and hope! Luckily, I had the right stuff (and the right couscous as well;))! This was super easy to make! Have I mentioned I've destroyed many pans trying to cook rice? Not with Couscous!

Jeremiah brought the skewers up the stairs and the house immediately filled with delicious smells! Even Skarlette was going for her high chair! They made a beautiful presentation as well!  
The bison was the star of the show. The veggies were melt-in-your mouth delicious. The brush-on gave the food an extra boost of flavor without overpowering it.

Mmmm Mmmm MMMM!

The couscous salad was an absolutely wonderful accompaniment to the dish. The salad was even better the next day as the flavors were able to blend together. I have to say that I'll be making couscous again very soon! What a wonderful learning experience!
