GIVEAWAY! Move aside Traditional Gingerbread HOUSE! Salba Smart® Chia-Gingerbread... Tardis?!

I love Salba Smart® Chia Seeds. You can check out some of their AWESOME health benefits on my previous blog HERE.

I'm always looking for new ways to use them. This month's assignment was to make cookies incorporating chia! Being the overachiever I am, I decided to make one GIANT cookie! Gingerbread. MMM! 'Tis the season, after all!

Four words on the assignment from Salba Smart®, (as a new ambassador- THANKS GUYS!:)) stood out to me, "adapt-so-it-fits". WELL, my nerd is calling out to me this month.

I give you, Dr. Who's Chia Gingerbread TARDIS!
Dr. Who, 11th doctor minus his Fez (I think the kid ate it) and minus an arm (and the kid DIDN'T eat THAT- he had a rather unfortunate meeting with the floor.)




Adding chia seeds to a cookie recipe is SUPER simple. Make a chia gel: 1 part WHOLE seeds to 3 parts water. Let it sit until gel forms: about 5 minutes. This can be added to virtually any recipe!

Recipe,  Adapted from: 

Eileens Spicy Gingerbread Men


  • 1 cup butter
  • 1 cup sugar
  • 1 cup molasses
  • 2 egg yolks
  • 3 T SalbaSmart® Chia Gel 
  • 4 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cloves
  • teaspoons ginger
  • 1 teaspoon ground nutmeg

Directions

  1. In a large bowl, cream together the margarine and sugar until smooth. Stir in molasses and egg yolk and chia gel. Combine the flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth. Cover, and chill for at least one hour. (I had them in overnight)
  2. Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes using the Tardis Template. Place cookies 2 inches apart on ungreased cookie sheets.
  3. Bake for 10-12 minutes in the preheated oven, until firm. Remove from cookie sheets to cool on wire racks. DO NOT BUILD UNTIL THESE ARE COOL AND FIRM!

Icing  (the glue):


For the icing/glue, I use Alton Brown's Royal Icing. <-- completely recommended! It was like super glue!!! The roof would have been a lot harder without it!

If you all drink pop and different flavors and a lot of it then probably it is. It saves a ton of space and you get to keep all your flavors on hand to drink whenever you want. If you go and buy a 2 liter bottle at the store and open it, you only have a few days and you have to drink it all. With SodaStream, you can make a small bottle or a 1 liter at a time."

India Tree® - Night In Baking With My Friends!

Where inappropriate jokes are shared and the calories don't matter...


When friends get together and bake, something magical happens. Smiles are had, good food is eaten, and new inside jokes and memories are created. 
It doesn't happen often enough with our busy lives, and I can't wait for this to become something we all do regularly. Alternating houses of course! (Sorry about your poor carpet and counters Loni!) 

Getting my collection of goods from India Tree® set off this budding tradition. I was so lucky to have been chosen to review some of their amazing products. I knew I wasn't going to be able to keep it to myself, so I recruited my friends. Everyone was impressed with the products, and keep coming up with more ideas of what to use them for!  

India Tree® Mulling Spices! Check them out!


Araya did an amazing job with creating bathtub paints from India Tree's Nature's Colors Decorating Set. These turned out so awesome, I created a blog just for them. If you missed it, you can check out the details here! I highly recommend these colors if you have sensitivity to artificial dyes and colors as these are made from nature. Beets, for example, are what gives the red it's beautiful color!

The Dark and Light Muscovado Sugars had me SUPER intrigued. And I'm ashamed to admit I could have taken a spoon to either of these sugars!

The India Tree® website describes the Dark Muscovado Sugar as "a fine, moist texture, a high molasses content and a strong, lingering flavor that goes well with other rich flavors such as gingerbread, coffee, chocolate cakes and fudge. Use INDIA TREE Dark Muscovado Sugar in recipes calling for dark brown sugar"
They aren't kidding when they say this sugar has a STRONG molasses flavor. It was very surprising and the quality of this sugar is apparent upon first taste. While other brown sugars are incredibly sweet, this sugar is full of FLAVOR.

The Light Muscovado Sugar is also incredibly flavorful, but not quite as strong! The website says, it "is a fine, subtle and versatile molasses sugar. With its rich aroma and delicate flavor, it is a superior substitute in any recipe calling for light brown sugar" Store bought light brown sugar has NOTHING on this sugar! SUPERIOR is quite the perfect word for this product.

1.) Make Cake Balls and freeze
2.) Pipe melted chocolate onto parchment paper into the shape of a "hand" for turkey feathers.
3.) Dip frozen cake balls in chocolate
4.) Add candy googly eyes, make your own eyes, use candy pearls and dot with more chocolate.
5.) Pipe colors onto feather and beak.
6.) Let harden, remove, Eat!

India Tree® All-Natural, Homemade Bathtub Paints!

What drew me in to the India Tree® brand, was their beautiful, all natural food coloring.

"INDIA TREE Decorating Colors are made from concentrated vegetable colorants. They contain no corn syrup or synthetic dyes. Use them to color icing in rich jewel tones or soft pastels. I had gone around to different grocery stores looking for tub paints for my daughter. When I found them, I was horrified by the ingredient list.

As a child, I was prone to constant bladder infections. I don't think my mother realized at the time how horrible things, like a certain Mr. Bubble, were for my fragile system. I didn't want my daughter to have the same, painful fate. I cringe when I see Skarlette sitting in soaps. (We keep these to natural, limited ingredients as well.)

I was determined to make my own tub paints, but was still worried about the artificial colors found in the grocery store. I knew she would be putting these things in her mouth... no matter how hard I tried to stop her.  (See photo! Tehe)

 

At a glance...

India Tree­® ingredients:
Blue: deionized water, glycerin, vegetable juice for color.
Red: citric acid, beet juice for color.
Yellow: deionized water, glycerin, turmeric for color. 
Soap we use:
Water, saponified coconut-hemp-olive oils (with retained glycerin), olive fatty acids, peppermint oil, rosemary extracts, peppermint, lavender, almond, eucalyptus, tea tree, aloe vera baby-mild.

May Contain: D&C Red 33, FD&C Red 40, FD&C Yellow 6, FD&C Yellow 5, Ext. D&C Violet 2, FD&C Blue 1.

My wonderful friend, Araya, came up with the most beautiful assortment of colors with India Tree® that made all of us smile! Thank you Araya!


Make your own! 

Ingredients: 
  • India Tree® Nature's Colors Decorating Set
  • A Natural, clear bath soap (Such as Dr. Bronner's Liquid Castile)
  • Cornstarch
Easy directions: 
  1. Add amount of soap equivalent to amount of paint you would like (A little goes a long way!)
  2. Add food coloring to desired color
  3. Add corn starch a little at a time until you get desired consistency! (We liked ours a little thinner than the consistency of regular finger paints.)

Side note: Colors were a different texture than artificial food coloring you buy at most grocery stores. It may take a bit to get used to. Araya recommends "shaking them before every use, however, the texture didn't effect the beautiful, natural looking colors."

Araya also adds, "You can have piece of mind that they are natural and not made in a lab. I for one, love that! I would most definitely use them over the unnatural dyes. In cakes, cookies, coloring eggs, water color paintings with my kids!"

It was great to get out for the night and have a hotel room and bed all to myself! I thought I would toss and turn from lack of sleep missing my family... Oh BOY, was I wrong!!
The absolutely delicious, late night dinner, with a side of Kahlúa and fellow AllStars, Allrecipes Staff, and Kahlua representatives, assured heavy slumber as soon as my head made contact with the pillow! (Party animals!)
 

AllStars were treated to a wonderful dinner at Cuoco. Everything was enjoyed
from octopus legs (yikes!) to heavenly pastas and desserts.


Back at home...

I was so excited on my return about the video, my experience and that I actually LOVED the drink I was representing, I made my husband and I each one. (Okay, maybe two or three.) He loved it as well and is looking forward to trying all the seasonal flavors!



So I was too excited to run out and get some ABSOLUT vodka THAT NIGHT,
but this was an acceptable substitution in my opinion! :)

 Kahlúa Espresso Martini

The Recipe


Legend has it the Kahlúa Espresso Martini was created in the 1980s by a London cocktail guru late one night for a famous supermodel. The mixologist had the brilliant idea of combining a shot of espresso and vodka with our coffee and cane spirit to create a martini like no other. Perfect for a brunch with friends, an after-dinner cocktail or before a big night out.

Ingredients:

1.5 parts KAHLÚA
1 part ABSOLUT VODKA
1 fresh brewed espresso

How to mix it:

Fill a shaker with ice, add Kahlúa, ABSOLUT VODKA and a fresh brewed espresso. Shake vigorously, and strain into a chilled martini glass.

Tip from D.G. Says:

I learned this great tip during the making of videos!: To chill your glasses, rinse under cold water and place in the freezer for 10-15 minutes!

Ch-Ch-Ch-Chia! Salba CHIA Review and Giveaway!

Give it up for CHIA seeds! They've been around a while! But now, are all around us as a super food!



I have to admit, when I first saw CHIA seeds to eat on the store shelves, I chuckled. After all, when I was growing up, Chia Pet Heads were all the rage.

The question wasn't IF you had a Chia Pet, but what head you had. They had everything, and apparently still do!

Nutritionally, Chia seeds are still a newcomer in my household. I didn't realize how absolutely amazing they were and the endless possibilities of things I can make with them! Now, I'm just a completely geeking out for Chia. Thank you Salba Smart for the opportunity to review these beautiful little morsels! I can see why you are so excited about Chia!


My personal research resulted in an overwhelming amount of information. For example:  40+ Ways to Use Chia Seeds , An article from Huffington Post entitled, Chia Seed Uses: 10 Surprising Ways to Use Nature's Superfood, or, my personal favorite, Top 10 Health Benefits of Chia Seeds.

Let me go ahead and touch on those awesome health benefits first!

Chia seeds provide quite the nutritional boost. After seeing the following chart off of Salba's site, I was in shock! What a powerful punch (KA-POW!) these little super-seeds have!

Run out of eggs? Soak 1 level tablespoon of chia seeds with a quarter cup of water to make an egg substitute for baking cakes and cookies!

Use seeds instead of bread crumbs to hold meatballs together, gluten-free alternative.

Use ground seeds and mix with hot milk to make a porridge

Use ground seeds with gluten free flours to make a delicious pizza crust!

Add it into smoothies, salads, stir fry or anywhere else you just want a nutritional boost

Now for my own experimentation! Muhahaha! I consider both a phenomenal success! :)



I love, love, love canning! I can jams and jellies yearly. It's a family & friends event to go to our local farms and pick berries. Then I spend hours over the stove cooking, straining, canning, burning myself... if you're canner- you know! The result is worth it and highly sought after. Homemade is just better!

Cranberry sauce has always been a favorite of mine. I fondly remember sitting in front of the television as a kid (and maybe as a big kid- you have no proof!) eating a can of jellied cranberry sauce with a spoon. My mother told me later that cranberries is what she craved during pregnancy. I'm not sure if that is an explaination for her cravings, or a serious coincidence, but it still makes a great story (and was my excuse for many years for eating the whole can to myself.)

Our family is trying to cut down significantly on processed sugars. I had a bag of cranberries, and chia seeds. I was pretty impressed with this experiment of Chia Cranberry Sauce! Feel free to try this for yourself with a big turkey dinner, maybe?

Jaana's  Salba® Chia 

Cranberry  Sauce



1/4 cup Salba® chia seeds
1/2 cup water

1 12oz bag fresh cranberries
1/3 cup Agave nectar
1 tsp ginger zest
1 tsp orange zest

1 cinnamon stick.

1. Soak chia seeds in water until mixture has a jelly-like texture, about 5 minutes
2. Heat cranberries, agave nectar, cinnamon stick and zests to a boil, stirring constantly. Lower heat and simmer until cranberries are soft and a majority pop! (about 10 minutes). Keep stirring so the mixture doesn't scorch.
3. Mash berries with bottom of heat-proof jar or potato masher. 
4. Stir chia seed mixture into cranberry mixture. Remove from heat and let cool for at least 10 minutes.
5. Remove cinnamon stick.

If mixture is too tart, add more agave nectar to taste. Eat warm or refrigerate until ready to serve.

Jaana's  Salba® Chia 

Gluten-Free  Ancient  Grain  Pizza  Crust




1 tbsp ground Salba® chia seeds
2 tbsp boiling-hot water
3 cups gluten-free flour (I used ancient grain flour from Costco)
3 pk (4 tsp) active-dry yeast
2 tbsp honey 
1/2 to 1 1/2 cups (Baby-Bath-Warm water- don't over-think it!)
1/4 cup extra-virgin olive oil

oil for brushing tops of crust


Making the Salba® slurry: With ground chia in a small bowl, pour in 2 tbsp boiling-hot water. Whisk immediately and quickly to form a thick paste. Set aside to cool.

Combine dry ingredients. Put gluten-free flour and salt into the bowl of a stand mixer, mix until combined.

Activate the yeast: Put yeast, honey and baby-bath-warm water into a small bowl, stir gently. Yeast will foam when activated.

The dough: Add Salba® slurry to dry ingredients and mix for minute or so. Pour yeast water and olive oil in to dry ingredients. Mix on medium speed until dough comes together into a soft ball and feels soft and pliable. If the dough is too dry, add more warm water in small amounts until it feels right. 





Spray inside of bowl with non-stick spray (I used coconut oil), cover bowl with plastic wrap, & set aside for 1 hour to let dough rise. 



Preheat oven to 450° with cold pizza stone in the oven if you have one!. (If you feel comfortable cranking up the heat, going up to 550° is great! Just watch the dough carefully!- I put mine to around 500°!)

Rolling out the dough: 1/2 of the dough is equivelent to 1 pizza. Roll the dough to desired thickness on parchment paper. Our family prefers thinner crusts, you might like thicker.


Pre-bake the dough: Brush the top of the flattened dough with oil (I used avocado oil). Transfer dough from parchment paper to hot pizza stone. Pre-bake dough until it has started to crisp up and brown at the edges, about 8-10 minutes. (Depending on how hot your oven is, shorter times the hotter you have it cranked up!)




Top pizza with your favorite toppings bake for 8-10 minutes and enjoy! :)



Our pizza was topped with marinara, cheese, kale, leeks, tomatoes & seasoning


Yield 2-8in pizza crusts or 1-16in pizza crust.

Allrecipes.com, Seattle & Kahlúa Espresso Martini: PART ONE!





Thanks to Allrecipes.com & Kahlúa,I got to spend some time in Seattle to have the experience of a lifetime! Working with these two companies to create videos for allrecipes.com was an absolute blast! (Not to mention fun to brag about! *big grin*) 





Seattle is always an adventure for my family. We are only an hour north of Downtown, so a day trip is always easy-peasy! We absolutley love Pike Place Market and it's abundance of fresh, local product. We particularly enjoy taking our daughter to the peer and letting her walk around the Seattle Aquarium! This is one of her favorite places to be. In fact, "fish" was Skarlette's first word, all because of a trip to the Seattle Aquarium!





My job was to work with the team to help create the Kahlúa Espresso Martini video. The video was shot in three stages: "video", "the interview", and "the voice over." I would have to say that "the interview" portion was the most nerve racking, but the awesome personalities around me kept me at ease! Thanks guys! I cannot wait to see and share these awesome videos!







The seasonal flavors of Kahlúa are fantastic! I've personally gotten to try Pumpkin Spice and Gingerbread in addition to the Original. Pumpkin Spice would be my favorite of all the Kahlúa flavors! This wouldn't be a surprise to anyone who knows me personally!
